Abstract
The state of Pará stands out as one of the largest fish producers in Brazil; however, there is a lack of studies regarding consumers' perceptions of the hygienic and sanitary practices of fish handlers and establishments that sell fish in the region. Therefore, the aim was to assess the perception of residents from the municipalities of Belém, Ananindeua, Marabá, and Santarém regarding the level of knowledge of hygiene in both the environment and the food. A total of 393 online questionnaires were applied. The data were subjected to statistical analyses, including descriptive statistics and Multiple Correspondence Analysis (MCA). Most of the respondents were local residents, aged between 18 and 30 years, who reported living in urban areas and having completed higher education. The majority of respondents evaluated the lack of ice preservation, the use of wooden counters at municipal street markets, the wearing of jewelry, the simultaneous handling of fish and money, and the absence of Personal Protective Equipment (PPE). The street markets and fish markets presented a lower hygienic-sanitary quality compared to the data obtained from supermarkets and fishmongers in the municipalities surveyed, requiring greater sanitary attention.
